1️⃣ Clean the Fish – Wash and clean the fish pieces 2-3 times. Soak them in turmeric-infused water for 30 minutes.
2️⃣ Prepare the Base – Heat oil in a kadai/wok, add mustard seeds and black stone flower, and let them splutter.
3️⃣ Sauté Aromatics – Add shallots and cook until transparent. Stir in ginger-garlic paste and sauté until the raw aroma disappears.
4️⃣ Cook Tomatoes & Spices – Add chopped tomatoes, cook until soft, then mix in red chili powder, coriander powder, and turmeric powder. Cook until the raw spice aroma fades.
5️⃣ Prepare Tamarind Extract – Soak kokum tamarind in hot water for 1 hour, then extract the juice and grind it into a fine paste before adding it to the pan.
6️⃣ Simmer the Curry – Add 1 cup of water and tamarind juice, cover, and allow it to cook. Add salt to taste.
7️⃣ Cook the Fish – When the curry starts boiling, add the fish pieces and simmer on low heat until cooked through and the oil separates.
